Master thesis about the analysis of Espresso Coffee Aroma by static headspace GC-MS (gas-chromatography and mass spectrometry), sensory flavor profile and the new technology: “Small Sensor Systems (S3)”, an innovative tool equipped by Nasys s.r.l with mox gas sensors.
